While I do thoroughly enjoy preparing fresh meals for myself and my daughter daily, sometimes a quick snack is is just plain easier. In a world where Doritos, Slim-Jims, taco bell, etc.. are never more than a 2 minute car ride away, finding vegan snacks that are protein and nutrient dense, not processed and loaded with chemicals that are actually tasty can be challenging.
Which is why once a week I make a trip to Henry's Market http://www.henrysmarkets.com/html/ to load up from their bulk bins. 2 lbs pistachios, 2 lbs raw almonds, 2 lbs cashews, and 1 lb Brazil nuts (great source of seleniumhttp://en.wikipedia.org/wiki/Selenium).
